Die Finca Casa Castillo wurde im Jahre 1941 von Don José Sánchez-Cerezo gekauft, um den in der Region wachsenden Bergrosmarin abzubauen. Auf dem Gelände der Finca befand sich eine aus dem Jahre 1870 von Franzosen erbaute Bodega. Erst 1985 wurden die alten Weinberge von der heutigen Inhaberfamilie rekultiviert und neue Rebsorten angepflanzt, bis schließlich 1993 auf Casa Castillo der erste Jahrgang 1991 produziert wurde.

Die Weinberge von Casa Castillo befinden sich auf einer Hochebene, wo die Monastrell-, Garnacha-, Cabernet- und Syrah-Reben von dem durch die Nähe des Mittelmeers sehr milden kontinentalen Klima profitieren. Die Syrah-Reben des Valtosca wachsen auf 28 ha, die Böden sind aus rohem Kalkstein, die mit feinem Sand bedeckt sind. 

El Molar ist ein 100 % Garnacha, eher unüblich für diese Lage, aber ein phänomenales Exemplar aus dem Süden Spaniens. Ausbau in gebrauchten französischen 500 L Barriques, unglaubliche Frische und Balance für diesen Breitengrad.

I tasted a first tentative blend of the 2015 El Molar a few weeks before bottling, a very pale and delicate, perfumed and insinuating Garnacha. The bottling was finally delayed, so I didn't have time to taste the final version, hence the range of scores, which should be pretty accurate. In 2015 the volumes for El Molar were increased as new plantings came into production and the year was normal in terms of yields after a very short 2014. This is the first year the wine is produced with 100% full clusters, in a vintage when they had a bit of everything, higher ripeness but also freshness and balanced. The wine is rich and aromatic, a little intoxicating, with aromas of dry flowers and a touch of aromatic herbs. The palate shows ultra fine tannins and very good balance. 5300 bottles produced and bottled in two lots.
