Álvaro Palacios ist heute nach seinem großen Erfolg mit L'Ermita einer der großen Weinmacher Spaniens. Zusammen mit Rene Barbier und Ricardo Perez war Álvaro Palacios einer der Männer der ersten Stunde im heutigen Anbaugebiet D.O.Ca. Priorato. Nach dem Studium der Önologie in Frankreich arbeitete er bei Château Pétrus in Bordeaux und Stag's Leap im kalifornischen Napa Valley. 

In Gratallops, dem Zentrum des bergigen Anbaugebiets Priorato - katalanisch Priorat - produziert Alvaro Palacios seine 3 Weine Les Terrasses, Finca Dofí und L'Ermita.
Der Finca Dofí verdankt seinen Namen der Einzellage im Priorat, auf der dieser Wein kultiviert wird. Der Wein stammt von etwa 20 Jahre alten Rebstöcken und wird 12 - 16 Monate in neuer französischer Eiche ausgebaut.  

Die amerikanischen Weinzeitschrift "Wine-Enthusiast" hat der Ausgabe September 2009  die 10 besten Weine Spaniens gekürt: Entscheidend für die Auswahl der Weine sei nicht der aktuelle Jahrgang, sondern die Beständigkeit im Laufe der Jahre. Bewertet wurde nur aktuelle Jahrgang, bei Finca Dofi war das 2006. Weiterhin wurden unter die Top-10 gewählt: Numanthia 2006, Vega Sicilia Unico 1998, Rodas Cirsion 2005, Pazo de Señorans 2008, Gramona Tres Lustros 2001, San Vicente 2005, Malleolus 2005, Lustau Almacenista Palo Cortado 1/50 und Corullon 2006.

Wine Enthusiast - Alvaro Palacios - Finca Dofi (Priorat) 2006 - 95 points - $90 (Jg. 2006) Alvaro Palacios, the prince of Gratallops, always manages to kock the ball out of park with his Finca Dofi, a single vineyard blend of garnacha beefed up by Cabernet Sauvignon, Merlot and a touch of Syrah. Hailing from a 22- acre vineyard planted when Palacios first arrived in the Priorat some 20 years ago, Dofi is, year after year, a picture of power and purity combined with elegance. It’s also a terrior wine of the first order, and while the unirrigated Dofi vineyard may not be as tough to tend as Palacio’s nearby L’Ermita vineyard. It has the requisite schisty soils and wine-herb surroundings that impart a minerally, sauvage subcontext to the wine’s plum, berry and licorice essence. “I just love Garnacha,” palacios told me recently while the two of us stood on one of Dofi’s terraces. “It’s capricious, brave and valiant. No matter how dry; no matter how hot it might get. If the soil is poor and the drainage good, the vies will find the water and nutrients they need to make this type of wine.”

Wine Advocate # 183 - Jun 2009 - Jay Miller - 93 - Finca Dofí 2006 - Drink: 2009 - 2019 $57-$100 (Jg. 2006) The 2006 Finca Dofi is 55% Garnacha and 45% Carinena from estate vines ranging in age from 16 to 23 years. It was aged for 9 months in 80% new French oak. It offers up a more complex bouquet of toasty new oak, lavender, leather, mineral, truffle, black cherry, and blueberry. Layered on the palate with a plush texture, it has excellent depth, succulent flavor, and excellent balance. Surprisingly forward, it will evolve for 2-3 years but can be enjoyed now and over the next decade.
