The rosé sparkling Cava 2019 Rosat Reserva is different from most sparkling wines (and from their initial vintage). It's a blend of 50/50 Macabeo and Garnacha Tinta co-fermented after a few hours of maceration of the Garnacha and has the nose of both—Macabeo is the backbone and gives tension, and Garnacha gives it more volume without loosing the sapidity. It has a bright pink color—not like the pale wines so fashionable now—a bright nose with floral notes, dry and serious. 80,000 bottles produced.

AT Roca is the family project of Agustí Torello Roca and his father, Agustí Torello Sibill, who want to make fresh, single-harvest, terroir sparkling wines in the Clàssic Penedès appellation. They have 16 hectares and rent a further six, and they have contracts with growers for an additional 24 hectares, all certified organic, all brut nature. From 2019, they used concentrated must from their own organically farmed vineyards for the second fermentation. They produce 280,000 to 320,000 bottles per year.
