The 2015 Caíño from Zárate is always produced with Caíño vines planted on granite soils in different vineyards owned by Zárate in the Salnés Valley. The wine is fermented with 30% full clusters in an oak vat, with foot treading and aged in used barriques for one year. It has the variety's telltale aromas of dried roses and freshly cracked black peppercorns and a vibrant palate, with lively acidity and very fine tannins. There is more ripeness than other vintages, with less herbal notes and still elegant and fresh. It ends very tasty. 1,330 bottles were filled in September 2016.
